I need help with picky 1 year olds. What are some good foods that are healthy and quick to make?

Whole wheat or lentil pasta with veggies was our staple.

Have them try a little bit of everything.  You will be surprised at the things they like.  My kids loved odd things, like olives, fish, etc., but wouldn't touch mashed potatoes.  Who doesn't like mashed potatoes??  One of my go-to quick meals was always eggs.  when they were first eating whole foods and learning to feed themselves I would scramble and make a really thin omlette and cut it into strips.

I guess it depends on what they are picky about.......my toddler loves diced peaches and pears, cooked green beans, sauteed zucchini (its sweet when cooked!) and all carbs though I try to get whole grain whenever possible

Oatmeal! I put fresh berries in it and a drizzle of honey (safe after 1 year of age).

My son loved popsicles. So I started making my own, with pureed veggies. He didn't care, as long as it was frozen.

My daughter is 4 and she loves konjac noodles (shirataki) with thinly sliced veggies. I'm lucky; she has never liked chicken nuggets or mac & cheese.
